I'd like some easy-peasy recipies. I don't mean it just has to travel to Little Brazil (wherever that may be in America) and hunt down exotic ingredients.

So, any of you out there, if you cook Brazilian food or like to eat it, share your recipies with us. If you have none, maybe some member out there will have the coveted recipe for that favorite dish of yours.

Dont hear much about Brazilian food, especcially here in England,

It would be nice to try something like a Brazilian curry.

What IS it with you English and your curry?

Jasper just loves the stuff. I can't get into it. It's tastes as though I opened up my spice/herb cabinet and dumped everything into a pot of water and let it boil.

I'd like some good chicken or pork dishes. Maybe some side dishes as well.

Ah, I still remember going to this little Cuban restaurant where they served you half a roasted chicken with white onions that were still a little crisp. The side dish was, of course, rice and black beans. I could live without that, but that chicken with the onions was heavenly.

Indian food is probobly one of the most popular here in the uk, you just cant move for Indian restaurants in most towns.
I myself like an occasional chicken curry (madras) but if i have too many my guts suffer somewhat.

Tonight its a roast chicken with American long grain and wild rice plus veg. No spice or garlic for a change.

"Madras" .....

....brings back surfing memories. I used to surf at a spot we named "Madras." Dunno why we called it that....the Indian plaid (known as "madras") was fairly popular at that time.

If you ever want a recipe for herb rice, let me know. It's great with lamb chops.

Done my fair share of surfing it was in a place called Newquay Cornwall, in those days i had a VW van which was home for weeks on end. Must have been surfin mad!!

As lamb is one of my favourites the herb rice would be nice When you have time.

Hey Niquie,

I'm really sorry I don't have any good recipe to share. I don't even know how to cook. For you to have an idea, I find "delivery-food" and "microwave" some of the most important human inventions. My knowledge of any housekeeping is very limited. We (Brazilians) do count on our housemaids for having things done at home.

PS - by the way, this is an important knowledge about Brazilians. Body contact is important here and we love kissing. We kiss when we meet, we send kisses when we talk on the phone and we write kisses at the end of a letter/e-mail/note. You pronounce it as 'bay joos'.

Here's the recipe....

In a sauce pan, melt some butter (a couple of tablespoons or so). Add some minced shallots and garlic. Cook for a minute or so on low heat, but do not burn the garlic. Add one cup of rice, keep stirring (gently) until the rice has absorbed the butter (this will take a few minutes). Add two cups of chicken or vegetable stock. (Use canned stock and if it's just shy of two cups, add water to make up the difference.) Cook covered for about 15 minutes on low heat. Don't be tempted to lift the lid.

After 15 minutes or so, you can add your dried herbs. You can use a mixture of Italian Herbs, or you can use just one or two herbs that you have a preference for. Alternatively, you can you fresh (finely minced). You will need more fresh than dried as dried herbs are more pungent. (Put some dried herbs in the cup of your hand and with your other hand, rub them to bring out the oils.) Add some salt and pepper.

Stir in the herbs, cover and cook for another 3 minutes or until the rice is done.

This rice is a great accompaniment with lamb chops.

Yes i know, very kind of you Dont think im really qualified but i will give it a go.

e-England.com seems to have come on leaps and bounds, whether it will continue i dont know. Norway, Denmark and here at Brazil have gone rather quiet.
